Originally, it was only a small inn on the banks of the Ill, appreciated for its matelote with Riesling. Over the course of the 20th century, the Haeberlin family raised it to the rank of an institution, and it is now a stronghold of the great tradition: one that has inspired and will continue to inspire generations of cooks, and which retains the freshness and breath of excellence intact.
